Ingredients
- Shrimp – I use raw medium shrimp that’s 31-44 shrimp in a pound.
- Brown rice – I use 3 cups of leftover cooked brown rice. The rice needs to be at least a day old to prevent the rice from sticking together and becoming mushy.
- Grated garlic and ginger – I prefer grated over chopped in this recipe, it’s easier to marinate the shrimp in the flavors and to prevent bites of garlic or ginger.
- Scallions – I use these for flavor and garnish.
- Frozen stir fry mix – A bag of frozen vegetables is my secret weapon for quickly bringing many recipes together. I use a 1 lb stir mix that includes broccoli, carrots, green beans, onions, bell peppers, and mushrooms. You can use any favorite veggie mix.
- Teriyaki sauce – I use a high-quality teriyaki sauce for this recipe.
- Soy sauce – Adding soy sauce at the end adds some extra flavor to the shrimp fried recipe.
- Sesame oil – Stirring in a couple of teaspoons of sesame oil also adds a delicious flavor.
- Chili oil – If you like spicy shrimp fried rice, then keep a bottle of chili oil on hand. Chili oil adds a tasty spice to any Asian-inspired meal.
How to Make Healthy Shrimp Fried Rice
This recipe cooks fast; having all the ingredients ready ahead of time is essential.
- Stir together the shrimp, garlic, ginger, and one tablespoon olive oil in a small bowl.
- Heat olive oil in a large skillet or wok over medium-high heat. When the oil is hot then add in the shrimp and cook until pink and opaque. This step should take about 3-4 minutes.
- Remove the shrimp from the pan and place it into a clean bowl. Drain any liquid from the bowl and then stir in the teriyaki sauce.
- In the same pan, add the beaten eggs and cook until just set. This step takes about 1-2 minutes. Place the eggs on top of the shrimp into the bowl.
- Add the frozen vegetables to the same pan and cook on medium-high heat until vegetables are heated through, about 4- 5 minutes. Drain any excess water from the pan. Remove the vegetables from the pan and place them into a bowl.
- Heat 1 teaspoon of sesame oil in the pan and add the rice. Let the rice cook in the pan for about 2 minutes and then stir and cook for another 2 minutes. This gets the rice crispy.
- Stir in the shrimp, eggs, soy sauce, sesame oil, chili oil, and vegetables, and cook for another 2 minutes or until heated.
Cooking Notes
- You can use fresh shrimp or frozen – Regardless, make sure the shrimp is raw. Cooked shrimp can get rubbery when used in the recipe.
- Prep the shrimp ahead of time – Cleaning the shrimp takes the longest time, so try to purchase raw, clean shrimp. If you don’t, clean and prep the shrimp the day before to save time and aggravation the night you’re going to make this recipe.
- Use leftover brown rice – When I have fried rice on the meal plan, I’ll make the brown rice over the weekend and store it in the refrigerator until I’m ready to use it. I often have brown rice portioned out in the freeze to use in recipes.
- Cook components separately – Everything still cooks in one pan by by cooking the components separately you assure that you end up with crispy fried rice instead of mushy.
- You can use fresh vegetables – I love the convenience of frozen stir fry vegetables, but you can certainly use fresh vegetables. Peas, carrots, bean sprouts, onions, mushrooms are all delicious in this shrimp fried rice recipe.

Storage tips
For the week: Shrimp fried rice can be made ahead of time to warm up during the week for a quick lunch or dinner. After the recipe is prepared store it in an airtight glass container and refrigerate. Reheat in the microwave for 2-3 minutes or until hot.
For the freezer: You can also freeze shrimp fried rice into individual portions to enjoy for a quick dinner or lunch later on. Use glass or plastic containers. You can also freeze in freezer bags. Reheat from frozen in the microwave for 3-4 minutes or until hot.

If you like peas, keep a bag of frozen peas in the freezer to have them available for stir-fry recipes.
For best results, shrimp fried rice should use leftover cold rice. This tip helps the rice from bloating and getting mushy when cooking the fried rice.
A common reason any fried rice recipe gets soggy is because the pan isn’t hot enough, and the ingredients are crowded. To get crispy rice, cook each fried rice component separately and then mix everything.
It’s also helpful to drain any excess liquid from the pain, especially when using frozen vegetables.
Shrimp Fried Rice
Ingredients
- 1 lb medium raw shrimp peeled and cleaned

- 1/4 cup teriyaki sauce
- 2 eggs beaten
- 16 ounce bag of frozen stir fry mixed vegetables
- 3 cups cooked brown rice
- 3 teaspoons sesame oil
- 2 tablespoons soy sauce
- 1 teaspoon chili oil
