I have a secret for you.
I like low carb recipes…
Okay, maybe not the juicy secret you were hoping for but as lover of all things dough and cheese I think it is a big deal to admit to this. Now I do believe that weight loss is the result of the amount of calories you eat compared to the amount you burn regardless of the food you eat. I am living proof of that. I lost 40 pounds by watching my calories not carbs. Anyway, in my experience, there is truth to the way certain foods make me feel. When I eat foods that are lower in carbs and higher in fiber and protein I feel great. I don’t get bloated and have lots of energy. On the flip side, when I eat high carb food like my beloved pasta I do feel heavy and bloated. Booo! Why can’t pasta make me feel skinny?!
Anyway, I am a firm believer in “everything in moderation” so I would NEVER give up pasta or pizza. NO WAY! But I am aware of the way these foods make me feel so I try to limit them. I also try to have delicious low carb recipes in my arsenal. Like these new low carb cucumber sandwiches.
They are amazing!
Why does it take me 4 years to discover recipe ideas like this? I have no clue. When I do finally figure it out I feel like I discovered electricity or something iconic. #almost40foodblogger Regardless, I love this new way of enjoying my sandwiches.
Losing the bread with sandwiches is one way I cut calories and carbs. Unless it is delicious artisan bread I just feel like bread gets in the way. I prefer to eat “no bread” roll ups like my greek rollup, turkey & avocado, and/or beef and cheddar rollups. I feel I get the flavor without all the extra empty carb calories.
If I need a non-bread vessel for my sandwiches I typically turned to lettuce wraps like with this turkey BLT Lettuce Wrap.
Now I have another no bread option using cucumber.
These cucumber sandwiches can be made two different ways. First, you can cut the cucumber into chunks and removed the seeds. This give you a well of sorts to put in the sandwich filling. Or you can just slice them. There are no hard and fast rules to these. Slice anyway you want. Also, I chose to remove the skin. You can leave it on if you wish.
Next I spread some hummus on top. I used garlic hummus but use what ever you want. If you want to make your own here are some instructions.
Then I sprinkled on some grated carrot. Use what you have. Tomato would work great or even some baby spinach. Or better yet use both.
Then I layered a small piece of turkey and cheese. You will only need about 1/4 of a slice.
Last thing to do is put a second cucumber slice on top and enjoy. Easy peasy.
I loved these sandwiches. They are so good and filling. What I like best is I can get all the flavor and satisfaction from a sandwich but without the carbs and calories from the bread. If you are trying to cut carbs gives this sandwich idea a try.
Of course, you can use any filling you like. My sandwich is just an example and one of many different options. Have fun with it.
I figured each sandwich to be around 71 calories and 2 weight watchers points plus
Ingredients
- 2 cucumber slices
- 1 tablespoon of hummus
- 1 tablespoon shredded carrot
- small piece of turkey
- small piece of cheese
Instructions
- Take one cucumber slice and spread hummus over top. Layer on the rest of the ingredients and place the second cucumber slice on top. Enjoy.
