I have a confession. Well not really a confession but more like an interesting tid bit to share. When I was younger – say high school – up until about 5 years ago I LOVED LOVED Arby’s beef and cheddars. True story. Now, I did not eat them regularly but when I would get a craving I would have to get one immediately.
It has been over 5 years since I enjoyed an Arby’s beef and cheddar. Way over 5 years. I can’t even tell you the last time I even step foot into any fast food joint. Anyway, as I was brainstorming new “no bread” roll up recipes I thought about a beef and cheddar. I imagined the flavor of an Arby’s beef and cheddar but without the refined roll, questionable meat, and mystery cheese sauce. Yes I know that is what makes it taste good but we all know it ain’t good for us. If we want to stay healthy and fit we need to make healthier versions of our favorite junk foods.
I think I did just that with my new beef and cheddar “no bread” roll up recipe. I used sliced organic roast beef and cheddar that I found at my local grocery store, Wegmans. Sure it is a little bit more expensive but it is a much higher quality product and worth it in my opinion.
For the sauce I used a Thousand Island yogurt dressing. This dressing is amazing. So good. I don’t remember exactly what Arby’s sauce tastes like but this dressing made the rolls very tasty.
Then I added a little tomato and white onion. Rolled them up and enjoyed. I used 2 slices of roast beef because they were sliced very thin and 1 piece would not work.
I absolutely loved these and could see them completely satisfying an Arby’s Beef and Cheddar craving.
I like these ingredients together so much I am planning to make a mason jar salad out of them. I think that would be amazing so look for that in the next couple weeks.

Ingredients
- 1-2 slices thinly sliced roast beef
- 1/2 slice cheddar cheese
- 1 tablespoon or less of Thousand Island Yogurt Dressing regular will do if you can find the yogurt dressing
- a few small pieces of onion
- a few small pieces of tomato
Instructions
- Lay out the roast beef. Place cheese, dressing, and vegetables on top. Roll up, cut in half, and enjoy

This looks good, but seems like a lot of points for a snack. The salad is a good idea, but hot as handy to grab for a snack.

So I would say use a fat free Catalina dressing is much closer to Arby’s sauce. A light sautee of the onions. Or after you roll it zap it in microwave for 30 seconds just before eating. I was a HUGE fan of those sandwich
