A delicious apple sandwich made with creamy peanut butter, crunchy granola, and other toppings makes for the perfect kid-friendly healthy snack.
This healthy snack recipe is more of an idea than an actual recipe. But can’t we all use an easy recipe idea in our life? I know I can! I spend a lot of time cooking from scratch, and when I want a snack, I don’t want to complicate things.
These apple sandwiches check all the boxes for a deliciously satisfying snack – sweet, salty, and crunchy. The best part is that they are simple to make, and everyone loves them!
Reasons you’ll love this recipe
- Simple pantry ingredients – All you need is peanut butter, your favorite toppings, and an apple.
- It comes together in less than 10 minutes – If you need a quick snack recipe, this is it!
- Satisfying and filling – These apple sandwiches include protein, fiber, and healthy fats to keep you full in between meals
- Fun – The kids love getting creative in making their apple sandwiches.
Ingredients
- Apples – Any apple variety will work with these sandwiches. My two favorites to use are granny smith and gala apples.
- Peanut butter – To keep this recipe clean, I use organic peanut butter – you can use both crunchy or creamy. Of course, you can substitute any nut butter.
- Granola – this homemade almond butter granola is the granola we use most often. If you use store-bought granola, then look for organic granola without a lot of sugar.
- Dried fruit and other toppings – Dried shredded coconut, raisins, cranberries are typical toppings we use. I also love sprinkling superfoods like cacao nibs and goji berries on top too.
The beautiful thing about these apple sandwiches is that you can use any of your favorite toppings to create a healthy custom snack. Put together an assembly line with all of the ingredients and let everyone get creative in making their snack.
Thrive Market has a large selection of organic granola, nut butter, and other toppings to keep in stock, so you can always make a delicious apple sandwich.
Cooking Tips
You can remove the apple skin if needed – The apple skin provides fiber and other nutrients, but peel it off if your kids don’t like the skin.
Squirt lemon on the cut apple slices to prevent browning – Appls can start to turn brown rather quickly. A fix for that is to squirt lemon juice on the pieces or place them into a water lemon bath (1 cup water and one tablespoon lemon juice) for a minute.
Cut into quarters – making apple sandwiches using round slices is fun, but you can also cut the apple into quarters and add all of the ingredients to the top of the apple pieces.
Use an apple corer – It’s unnecessary, but using an apple corer will make it easier to remove the core from the apple. I either cut out the middle or use a bottle or cookie cutter to remove the core after I slice the apple.
Heat the nut butter in the microwave to soften up – Sometimes, organic peanut butter can be difficult to spread. If this is the case, heat it in the microwave for a few seconds or until soft enough to spread.
You can use seed butter or other nut-free butter – if you have a nut allergy, use your favorite nut-free butter on these apple sandwiches.
Supplies
- Apple corer
- Peeler
How to Make an Apple Sandwich
- If you’re using an apple corer to remove the core, then start by doing that. If not, then slice the top of the apple and then cut into four round slices. Each slice will be about ¼ – ½ inch thick. Again there are no hard-fast rules when slicing the apples.
- Then using a cookie-cutter, or top of a glass bottle, remove the apple core. You can also use a knife to cut out the core.
- Squeeze lemon juice on the apple slice. I use ½ of a lemon for each lemon. If I’m using more than one apple, I will put together a water lemon bath with 1 cup water and one tablespoon lemon juice.
- If the apples are wet, use a paper towel to pat the apples dry, and then spread one tablespoon of peanut butter on an apple slice and top with your favorite toppings. You can top with another apple slice or eat as is.
How to Store
This apple sandwich is best consumed immediately after making it. If you make these a lot, it’s helpful to have the toppings organized in bags or small storage bins.
