Southwest Chicken Salad (Mason Jar Salad)

This Southwest Chicken Salad uses spicy chicken breast, corn, black beans, avocado, red onion, pepper jack cheese, and a southwest ranch dressing. Enjoy for a quick dinner or layer it into a mason jar salad to enjoy all week.

Ingredients

Boneless Skinless Chicken Breasts Taco Seasoning Southwest Ranch Dressing Cherry tomatoes Bell peppers Red onion Black beans Avocado & lime Pepper jack cheese Romaine lettuce Tortilla chips

Step 1: Sprinkle chicken breasts with taco seasoning.

Step 2: Bake in a 375 degree oven for 25-30 minutes. Set aside to cool then chop into pieces.

Step 3: Chop avocado into chunks and then squirt with lime juice.

Step 4: Put the mason jar salads together starting with the dressing.

Step 5: Then layer in the vegetables and avocado.

Step 6: Last add the chopped chicken and romaine lettuce.

Step 7: Tightly place the lid on each jar and refrigerate up to 5 days.

Step 8: To eat give the jar a few shakes and then pour into a large bowl.

Sprinkle some crushed tortilla chips on top and enjoy!
