Mini Meatloaf with Veggies and Potatoes

These mini meatloaves are baked on a sheet pan alongside potatoes and veggies to make for a quick and delicious weeknight dinner! You can make this meatloaf with ground beef or ground turkey

Ingredients

Bread & Milk Ground Beef Ketchup & Mustard Worcestershire sauce Seasoning Grated Parmesan Egg Cheddar cheese Potatoes Broccoli

Step 1: Mix together milk and bread until a paste is formed.

Step 2: Mix together the ketchup and mustard.

Step 3: To the bread paste add the ground beef, Worcestershire, onion & garlic powder, salt, pepper, both cheeses, egg, and half of the ketchup mustard mixture

Step 4: Mix all of the ingredients until evenly distributed.

Step 5: Form into four loaves and place onto a sheet pan. Spread the rest of the ketchup mixture over the top.

Step 6: Mix the potatoes with 1 tablespoon of olive oil and place on the sheet pan with meatloaf.

Step 7: In the same bowl mix the broccoli and another tablespoon of olive oil. Place on the sheet pan next to the potatoes.

Step 8: Place into a 375 degree oven.

Step 9: Cook for 40 minutes or until meatloaf cooks through and potatoes and veggies are crisp and tender.

Serve for dinner or portion out into meal prep containers for a healthy dinner throughout the week.
