Buffalo Chicken Meatloaf

Buffalo chicken meatloaf is low-carb, high protein, and packed with delicious flavor. It's an easy weeknight healthy dinner that everyone loves. You can make it ahead on Sunday for the week or freeze for later.

Ingredients

Bread & Milk Ground Chicken Ranch Seasoning Eggs Breadcrumbs Hot sauce Blue Cheese Dressing Cheddar cheese

Step 1: Preheat oven to 350 degrees.Then, mix the bread and milk in a large bowl until it forms into a paste.

Step 2: In a small bowl, stir together the hot sauce and blue cheese dressing. Reserve 1/4 cup for glazing the top of the meatloaf.

Step 3: To the bread paste add the ground chicken, ranch seasoning, eggs, and bread crumbs and the rest of the hot sauce mix.

Step 4: Mix all of the ingredients until evenly distributed.

Step 5: Place meat mixture onto a prepared baking sheet pan sprayed with cooking spray and form a loaf.

Step 6: Brush the remaining hot sauce mixture over the top of the meatloaf.

Step 7: Bake for 60 minutes or until the internal temperature of the meatloaf reaches 165 degrees.

Step 8: Let the meatloaf sit for 3-4 minutes, then slice and serve.
