Ingredients

Sesame & peanut oil Ground turkey Chicken broth Teriyaki sauce Ground coriander, minced ginger, and scallions Eggs Shredded carrots Red bell pepper Leftover brown rice Peas

Step 1: In a large skillet, heat the sesame oil over medium-high heat until hot. Add in the ground turkey.

Step 2: Sauté until it is cooked through, breaking up the ground turkey as it cooks.

Step 3: Transfer the cooked turkey to a bowl

Step 4: In the same skillet, heat 1/2 tablespoon of peanut oil and stir the eggs just until set.

Step 5: To the ground turkey in the bowl add in the broth, Teriyaki sauce, and ground coriander and eggs. Set aside.

Step 6: Cook the ginger, shredded carrots, pepper, and scallions

Step 6: Stir in the rice and peas. Cook for a few minutes until the rice has crispy bits.

Step 6: Add the turkey mixture and egg.

Step 6: Stir and cook until hot.

Step 6: Serve in bowls with extra soy sauce.
