Healthy Carrot Cake Recipe

Carrots, cinnamon, cream cheese frosting- what more can you ask for out of a dessert? This Healthy Carrot Cake Recipe is the perfect sweet treat to enjoy this upcoming Easter (or any time honestly).

Ingredients

White whole wheat flour Cinnamon & nutmeg Baking soda & salt Buttermilk powder Eggs Brown & white sugar Vanilla extract Crushed pineapple Coconut oil Water Grated carrot Shredded coconut Cream cheese frosting

In a large bowl, mix the flour, baking soda, salt, cinnamon, nutmeg, and buttermilk powder.  Set aside.

In another large bowl whisk together the 2 eggs and both sugars until smooth.

Stir in the crushed pineapple, vanilla, coconut oil, and water into the sugar mixture

Slowly stir the wet ingredients into the dry ingredients until everything is combined

Add the carrots and coconut to the batter.

Stir just until combined. You don't want to  over mix the batter.

Pour the batter into a 9 x 13 cake pan coated with cooking spray.

Cook in a 350 degree oven for 30 minutes or until the center is set. While the cake cook make the frosting.

Let the cake cool completely before frosting it.

Spread the frosting onto the cake.

If you want add chopped pecan.

Cut into 16 pieces and serve!
