Ingredients

Beef Chuck Roast Flour Onions and Garlic Guinness Beer Tomato Paste Yukon Gold Potatoes Beef Stock Fresh Thyme Bay Leaf

Step 1: Place the cut-up chuck roast into a medium bowl mix with flour, salt, and pepper

Step 2: In olive oil brown the chuck roast on both sides. Remove the beef and set it aside.

Step 3: Heat olive oil in the same pot and cook the onions until translucent, about 3-4 minutes.

Step 4: Add in the garlic and thyme into the onions, and cook for another 2 minutes or until the garlic is fragrant.

Step 5: Add the Guinness. (pour in the entire can), bring to a boil, and then reduce to a simmer. Scrape up brown bits as it cooks.

Step 6: Add the beef stock or broth and the tomato paste.

Step 7: Stir until blended.

Step 8: Add potatoes, carrots, beef, beef broth, and bay leaf.

Step 9: Cook uncovered for 2 hours, stirring every half hour or so.

Step 10: Cover and cook for another hour.

Step 11: Stir in salt and pepper and serve with crusty bread.
