Loaded Cauliflower Mash Recipe

This scrumptious loaded cauliflower mash is filled with sharp cheddar cheese, sour cream, butter, and bacon! Even the potato lovers will be obsessed with this low carb and keto-friendly side dish!

Ingredients

Cauliflower Chicken Broth Sour cream Butter Shredded cheddar Shredded Parmesan Bacon Green onion

Cook the cauliflower in chicken broth until tender.

Drain the cauliflower and place it into a bowl.

Use a potato masher and mash until you get the desired consistency. If you prefer a smooth texture then either use a hand mixer or food processor to process until smooth.

Mix the butter, sour cream, grated parmesan cheese, shredded cheese, cooked bacon crumbles, salt, and pepper into the cauliflower mash.

Spread the cauliflower mash into an 8 x 8 casserole dish.

Bake in a 350 degree oven for 20 - 25 minutes. Top with extra bacon and green onions.

Serve with chicken, steak, shrimp or your favorite low-carb dinner.
