This Spicy Thai salad includes crunchy purple cabbage and cucumber, chili roasted sweet potatoes, edamame, quinoa, greens, and dressed with the most delicious homemade Spicy Thai peanut dressing.

Ingredients

Start by roasting the sweet potatoes and cooking the quinoa. Both need to cool before using in the salad. it's helpful to make both the day before. Then get the rest of the ingredients together.

Prepare the homemade peanut dressing. Leftovers can be used in various ways.

Add the dressing to the mason jars.

Then add the sliced cucumbers.

Add the shredded red cabbage to the mason jars.

Layer in the edamame and chickpeas to the mason jars.

Last, add the roasted sweet potatoes, quinoa, and greens.

Tightly place the lid on and refrigerate for up to 5 days.
