Start by roasting the sweet potatoes and cooking the quinoa. Both need to cool before using in the salad. it's helpful to make both the day before. Then get the rest of the ingredients together.
Prepare the homemade peanut dressing. Leftovers can be used in various ways.

Then add the sliced cucumbers.
