Ingredients

Onions & garlic Chili, cumin, and oregano Olive oil Tomato paste Beef broth and tomato sauce Canned chipotle peppers Dark kidney beans Minute tapioca Brown sugar Worcestershire sauce. Chuck roast or stew meat

For this Stew Beef Chili (Chili Con Carne) you can use chuck roast cut into chunks or purchase stew beef.

Step 1: Add the onions, garlic, chili powder, cumin, oregano, tomato paste, and olive oil in a medium microwave-safe bowl.

Step 2: Microwave for 5 minutes on high or until onions have softened and the mixture is fragrant.

Step 3: Transfer the onion and garlic mixture to the slow cooker.

Step 4: Stir in the beans, tomato sauce, beef broth, tapioca, Worcestershire sauce, chipotle chilis, brown sugar and bay leaf.

Step 5: Stir until all of the ingredients are combined.

Step 6: Season the chuck roast with salt and pepper and then stir in with the other ingredients.

Step 7: Stir all the ingredients until combined.

Step 8: Tightly cover and cook on low for 9 – 11 hours or high for 6-7 hours.

Step 9: Serve with sour cream, chopped onions, avocado, cilantro, or your favorite chili condiments.
