Let the craziness begin…back to school week is officially here. Every summer I promise myself that I am going to stay on top of the back to school shopping game and every summer I am running around like a chicken with my head cut off. Never fails. I try but there are just not enough hours in the day. Good thing my kids find the nutso side of my personality entertaining. They have complete songs made up for my loony tune episodes. It is actually kinda funny. Anyway, ready or not back to school is here.
Even though the days leading up to the big day (tomorrow) were completely insane I must say I feel somewhat prepared. School supplies are bought. At this point it doesn’t matter that I was THE MOM shopping TODAY for last minute school supplies. Good thing most of them I ordered of Amazon but I still needed to get folders and some other things. Whatever happened to the days of only needing a Trapper keeper and a couple #2 pencils? Geesh. Do they still use brown paper shopping bags for book covers? I should probably find out. My mom was queen of wrapping text books.
This morning I took a few hours to grocery shop and prep food for the week. No matter what is going on in my life, if I look in my fridge and see a bunch of food ready to eat, I feel at peace. Not kidding. I also, made lunches, laid clothes out (including my exercise gear), and set the coffee maker. Bring on the first day of school. Good luck to all the parents
Okay lets talk exercise. My goal this week, and the rest of the month, is to exercise at least 3 days. I am still struggling with exercise. It is getting pathetic to say the least. August seriously kicked my butt so I am focused on recharging this month, starting tomorrow.
Here is my schedule:
Tuesday, Wednesday, and Thursday.
- 45 minutes on treadmill (10 min warm up, 25 minute run, 5 minute, powerwalk on incline, ad 5 minute cool down)
- 20 modified pushups
- 20 bicep curls and tricep extensions with resistance bands/or 5lb weights
- 50 squats
- 100 crunches
- Planks for as long as I can hold
- 50 russian twists.
Here is my weekly meal plan
Breakfast
Make ahead tips
- Smoothies will be made the morning of.
Mid morning snack
Spinach and feta oven omelet
Or
Almonds
Make ahead tips
- My plan was to make the oven omelet today but I ran out of time. I will make it tomorrow.
- Almonds were portioned out last week.
Lunch
Make ahead tips
- I made all the salads today. If you have questions please see my mason jar salad tutorial.
Mid afternoon snack
Vegetables and hummus
Make ahead tips
- Vegetables were cut up for the week. Yes they stay crisp all week long. I purchase store bought hummus but you can easily make your own.
Dinner
Chipotle chicken salad lettuce wraps or pitas
Hamburger mac and cheese – new recipe
Slow cooker turkey meatball subs – new recipe
Balsamic roasted vegetables and goat cheese naan pizzas
Make ahead tips
- Hamburger mac and cheese cups were made on Sunday.
- Slow cooker meals will be put together the night before and stored in the refrigerator.
- Vegetables will be roasted tomorrow. I cheated with these a little. Instead of purchasing all the vegetables and cutting up myself I bought them precut. I was not planning on doing this but I saw this package at wegmans and grabbed it.
- Chicken salad will be made today or tomorrow. I will make the chicken in the slow cooker, shred, then prepare into the salad. Easy.
What is on your menu this week?

Was it your intention to post the exact same week of menus as last week?

What did you have as a side with the chipotle chicken salad? It looks yummy!

Let me tell you how excited I am to have just discovered your blog! I really want to lose 25 pounds and have been failing miserably because I make bad choices when our crazy schedules take over and don’t have time to plan/make ahead my meals. Plus I get COMPLETELY overwhelmed when I try to sit down and plan meals for the week b/c it’s just TMI on the internet. I love your weekly planning with recipes and exercise plans! I’m so excited and am feeling motivated that I can do this with the suggestions and ideas from your website! Thanks SO much!!!!
